Soup makes a lot, y'all, and is one of my top reasons for starting this site. One pot of beans and a few dollars of vegetables turns into six or eight dinners. Soup, like this hamburger vegetable soup, is the cheapest way I know to feed people well.

What Freezes Well (and What Changes a Little)

Most other soups freeze well too. A few things come out a little different than they went in, and it helps to know which ones so nothing catches you off guard:

  • Pasta and rice get softer. For the best texture, freeze the soup without them and boil a fresh pot while it reheats. But if you already have a pot of noodle soup sitting there, freeze it anyway. It comes out softer and you may need to add a bit more broth, but the soup's not ruined.
  • Potatoes soften a bit as well. Cut them into good-sized chunks, and you'll barely notice.
  • Cream can look grainy when it thaws. A whisk or a few seconds with an immersion blender brings it back together.
  • Barley and other grains keep drinking broth. Add a splash more broth when you reheat.

Undercook the grain a little, or leave it out of the batch you are freezing and cook a fresh pot in fifteen minutes. So the trick is simple: cook the soup without the cream and stir it in at the very end, after thawing. And if a blended soup does come out looking a little grainy, an immersion blender fixes it in about ten seconds.

Lyn's Top Tips for Freezing Soups

  • Cool it fast. Get soup out of the danger zone within two hours. Pour it into a shallow pan, set the pot in an ice bath, or stir a couple of frozen water bottles through it. This is the step everybody skips and the one that matters most.
  • Leave an inch of headspace. Liquid expands when it freezes, and a lid that pops off in the freezer means freezer burn.
  • Freeze bags flat. Lay them on a sheet pan until solid, then stand them up like files. They stack better and thaw in a fraction of the time.
  • Portion by how you actually eat. I do single lunches, two-person dinners, and full family pots, and I label which is which. Pulling the right size out beats thawing a gallon for one person.
  • Label with three things: what it is, the date, and what to add back. That third one is the tip nobody gives you and the one that makes the whole system work.
  • Keep a running list on the freezer door. This way you know what you've got in the freezer!

How to Thaw and Reheat Soup

  • Overnight in the fridge. The best method by a mile. Move it from the freezer to the fridge in the morning, and it is ready for dinner the next night.
  • Reheat straight from frozen. Drop the block in a pot over low heat with a splash of broth, cover it, and stir every few minutes as it loosens. Takes about 20 to 25 minutes.
  • Microwave. This method works fine for a single portion. Reheat on half power and stir every couple of minutes.
  • If it looks thin or separated, it usually is not ruined. Simmer it a few minutes to reduce, whisk it, or hit a blended soup with an immersion blender. Then taste it, because cold dulls flavor and it almost always needs more salt than you expect.

Freezer Soup Recipe FAQs

How long does homemade soup last in the freezer?

Three to six months works well for most soups, and I aim to use mine within 3-4. Bean, lentil, and broth-based soups hold their quality longest. Anything with dairy or potatoes in it is better eaten within two to three months. Past six months it is still safe if it stayed frozen solid, it just starts losing flavor and picking up freezer burn.

Can you freeze soup with potatoes in it?

Yes. This one gets repeated as a hard no all over the internet, and it has not matched my experience. Potatoes come out a little softer than they went in, but they hold together and they taste fine. Cut them chunky rather than small and you will barely notice. If you are picky about texture, red or Yukon gold potatoes hold their shape a bit better than russets.

Can you freeze soup with milk or cream in it?

You can, and it is not the disaster people make it out to be. Dairy can look grainy or separated when it thaws, but a good whisk or a few seconds with an immersion blender while it reheats usually brings it right back. If you want it perfect every time, make the soup without the dairy and stir the cream in after reheating.

Do you have to thaw soup before reheating?

Not at all! A frozen block goes straight into a pot over low heat with a splash of broth. Cover it, stir every few minutes, and it will loosen up in about twenty minutes. Thawing overnight in the fridge reheats faster on the stove, but from frozen works fine when you forgot to plan ahead.

Can you refreeze soup?

Can you freeze soup in Ziploc bags?

Yes, and it is my favorite way to do it. Fill the bag, press the air out, seal it, and lay it flat on a sheet pan until it freezes solid. Then stand the flat bricks upright and they stack like files. They also thaw much faster than a deep container. Just set the bag in a bowl in case of a leak.

You don't have to build a whole freezer stash this weekend. Pick whichever freezer soup recipe on this list sounds good for dinner tonight, make the full batch, and put half of it away while it cools. That's the entire system. Do that a handful of times over a month and you'll open the freezer on a rough Tuesday and find dinner already waiting on you.

That's the part I didn't expect when I started cooking this way. It isn't really about the soup. It's about not having to decide, not having to shop, and not spending $40 on takeout because everybody's tired and nothing's thawed.
