Easy Prosciutto Sandwich

You can put anything you want on a Prosciutto Sandwich. I opted for avocado spread, cottage cheese, sesame seeds, and fresh parsley but you could also use cheeses like brie, burrata, or mozzarella.

Ingredients

Avocado Spread

  • 1 avocado
  • 1 garlic clove
  • 2 tablespoons fresh lemon juice
  • 1 pinch salt or more to taste

Sandwich

  • 1 teaspoon olive oil
  • 2 slices whole wheat bread or your favorite bread
  • 1 teaspoon olive oil
  • 4 slices prosciutto
  • 1 cup cottage cheese
  • 1 teaspoon black and white sesame seeds black sesame seeds, or everything bagel seasoning
  • Fresh parsley chopped

Instructions

  • In a food processor, combine avocado, garlic, lemon juice, a pinch of salt and 1 teaspoon olive oil. Blend until smooth. If necessary, add a tablespoon of water to make the mixture smooth.
  • In a pan over medium heat, heat a teaspoon of olive oil. Add the bread slices and toast until golden on both sides.
  • Spread the cottage cheese on the bread slices. Top with some of the avocado mixture. Finish with prosciutto on top. Sprinkle with fresh parsley and sesame seeds.

Recipe Tips

  • Eat Them Fresh: I don’t recommend storing these as leftovers and they don’t freeze well. Freshly made is best, plus they won’t last long anyway!
  • Thinly Sliced: Make sure when you order your prosciutto at the deli that they slice it ultra thin! It's the best this way.
  • Drizzle with Balsamic: This is especially amazing with some balsamic syrup drizzled over the top or a high quality balsamic that's a bit thicker. It's naturally sweet and so good!
