Ingredients

  • 15 ounces goat cheese softened
  • ½ teaspoons red pepper flakes optional
  • 1 tablespoon fresh rosemary
  • 1 pinch salt
  • 1 tablespoon honey or agave syrup
  • 2 eggs
  • cup all-purpose flour
  • 2 cups cornflakes
  • Oil for frying

Instructions

Mix the cheese:

  • Add cheese to a bowl and crumble with your hands. Add fresh rosemary, a pinch of salt, red pepper flakes, and honey. Mix well mashing the cheese with the back of a wooden spoon until fully mixed.
  • Roll goat cheese into small balls (about 1 inch in diameter). You should get 18-22 balls.
  • Place the cheese balls on a tray and refrigerate for 10 - 15 minutes to firm up or until you are finished preparing the remaining ingredients.
  • In a food processor, place cornflakes and pulse for a few seconds, about 20 - 25, to crush them.
  • Place flour in a bowl, beat the eggs in another bowl, and add crushed cornflakes to a third bowl.

Coat in Breading:

  • Coat each cheese ball in flour, shaking off excess.
  • Dip it in the egg mixture, ensuring it’s fully coated.
  • Roll it in the cornflakes, pressing gently to adhere.

Cook:

  • Heat about 2-3 inches of oil in a deep pan over medium heat (around 350°F/175°C).
  • Fry the cheese balls in small batches until golden brown, about 1–2 minutes. Use a slotted spoon to transfer them to a paper towel-lined plate.

Recipe Tips

  • Serving: Drizzle with some balsamic glaze and sprinkle with fresh herbs for serving.
  • Breading Hack: Designate one hand for wet ingredients and the other for dry. This way, you avoid turning your fingers into cornflake magnets!
  • Opt for a Goat Cheese Log: Skip the pre-crumbled goat cheese—it just doesn’t hold together as nicely. A log will give you the perfect consistency for this recipe.
  • Prep in Advance: Want to save time later? Assemble them ahead of time, flash-freeze on a baking sheet, and then store in a container. When ready to cook, pop them straight into the oven from frozen, just giving them a bit more time to crisp up perfectly.
